Vegan, Sweet n' Salty

Good morning lovelies!

Nachos, chips, fries, veggies, avo fries, you name it. All of this need something. Some kind of dip, marinade, just something! And I am so happy that I am able to present for you today, my ultimate 3 dipping sauces! They are my 3 reasons to double dip... I mean, nachos with the number 2, nacho cheese, God, I'm in heaven! Best of all? Totally motherfucking vegan, bastards.

God morgen dere søte banditter!

Nachos, chips, pommes fritter, grønnsaker, avokado fries, you name it. Alle disse trenger noe ekstra spesielt. En eller annen form for dip eller marinade. Jeg er så glad for at jeg nå kan vise dere mine ultimate 3 beste dipping sauser! De er mine 3 grunner til å dobbel dyppe.. Altså helt ærlig, nacho chips med nummer 2, nacho cheese, altså herregud jeg er i himmelen! Og det beste med det hele? De er alle sammen 100% motherfucking veganske! //


VEGAN CHEESE DIP



There are basically two different versions of the vegan quest; with a nut-base or with a veggie-base. I like the one with cashews, but you can also make the queso completely nut free! Here are the two versions:


Number 1. MY FAVORITE WITH A NUT BASE:

1/2 cup raw cashews // 1dl rå cashews

1 tsp salt // 1 ts salt

1 cup water // 2,5dl vann

1/2 nutritional yeast // 1dl næringsgjær

1 tsp Dijon mustard // 1 ts Dijon sennep

Optional: Make it spicy with a dash of Tabasco // Valgfritt: Gi den et ekstra kick med en slant Tabasco


Number 2. VEGGIE-BASED:

2 cups diced peeled potatoes //2 store skrelte poteter, oppkuttet

1 cup diced carrots // 1 stor gulrot, oppkuttet

1/2 cup water // 1 dl vann

1/3 cup olive oil // 0,5dl oliven olje

2 tsp salt // 2 ts salt

1 tbsp lemon juice // 1 ss sitronsaft

1/2 cup nutritional yeast // 1dl næringsgjær

1/4 tsp onion powder // 1/4 ts løkpulver

1/4 tsp garlic powder // 1/4 ts hvitløkspulver

How to:

Number 1. Nut-based cheese dip:

1. In a pan, bring the cashews. salt and water up to a boil, and let it simmer for 10 minutes.

2 Pour the mix into a blender and blend it together with the other ingredients until the mixture is extremely smooth. Add more water if needed.

TIP! You can store it in the fridge for up to a week. Warm it up before it is served, so the flavors will be maximized! A propper cheese dip should always be hot! Add some jalapeños and some chopped up tomatoes, maybe some cayenne, and make it mexican style! This dip is just heaven on earth.


Number 2. Veggie-based cheese dip:

1. Boil the potatoes and carrot until soft.

2. Blend the veggies together with all the other ingredients in a high speed blender, and blend it until the cheese becomes extremely smooth.

TIP! You can store it in the fridge up to a week. I love it when it is warm, so I always heat the cheese up before I eat it with my nacho chips. Add some jalapeños and some tomatoes, maybe some cayenne, and make it even more exciting!


CLASSICAL TOMATO SALSA



You will need / Du trenger:

3-4 large tomatoes //3-4 store tomater

1 red onion // 1 rødløk

Handful of fresh basil (optional but recommended) // Håndfull frisk basilikum (valgfritt men anbefalt)

1 tbsp dried basil // 1 ss tørket basilikum

1-2 tbsp Agave Sirup // 1-2 ss agave sirup

A squeeze lemon juice // En skvis med sitron


How to:

1. Chop the tomatoes, basil and onion in chunks, put in a serving bowl

2. Add dried basil, agave sirup, lemon juice and if used, the tomato salad spices.

3. Stir, and put the tomato salsa in the fridge to “marinade”, or serve right a way.

I would always let it set in the fridge for a couple of hours, then all the awesome flavors will come trough!


SPICY BELL PEPPER DIP



You’ll Need // Du trenger:


2 red bell peppers // 2 røde paprika

2 tbsp olive oil // 2 ss oliven olje

Juice from 1 lemon // Saften fra 1 sitron

Dried oregano and basil // tørket oregano og basilikum


How to:

1. Simply blend all the ingredients together in a blender. Add water if needed, or more olive oil.

2. Serve cold with your favorite snack!


TIP! If you want more proteins, you can add some chickpeas and tahini, to simply make a bell pepper hummus! It is crazy good!
